They are rich in vitamins A, B, C, and E, calcium, iron, magnesium, niacin, phosphorus, potassium, and amino acids and make a brilliant eye-catching garnish or topping to just about any dish. When harvesting, take extra care to harvest slightly above the soil with an extremely sharp knife or a scissor.
